New Halesworth café Rhubarb and Rose is a dream come true for owner who previously worked at National Trust sites Ickworth House in Bury St Edmunds and Dunwich Heath




The owner of a café set to open in a Suffolk town has spoken of her excitement at fulfilling her dream of owning her own business.

Rosie Garland, 24, plans to launch Rhubarb and Rose next month which will sell bakes, savoury and sweet treats and artisan coffee from its Halesworth Thoroughfare location.

This new venture will see Rosie, who grew up on a farm not far from her new shop, bake all the goods herself using local ingredients and with sustainability, something she is passionate about, in mind.

"It is really exciting and I can't wait. Even the coffee is coming directly from the farmer. I am really trying to be as sustainable as possible," Rosie said.

"I have always wanted to own my own tea room or coffee shop - I really love the personal side of a smaller place."

Rosie said she has many plans to make Rhubarb and Rose sustainable and environmentally-friendly, including encouraging visitors to bring their own coffee cups or Tupperware for takeaway food and drink.

She will also attempt to educate guests with the stories of where food has come from and why it is important to shop locally.

Rosie worked for the National Trust for six and a half years, first at Dunwich Heath where she was a manager and often did the cooking.

In May, she joined the team at Ickworth House in Bury St Edmunds where she managed the food and beverage department.

She said: "Working with the National Trust is what has given me the skills to start my own café. Now I just can't wait to get started with it all."

Rosie, who has made occasion cakes including wedding cakes in the past, also hopes customers start to visit to request special bakes.

"There is no where in Halesworth you can go to get a specialised cake, so I'd really like people to start coming to me," she said.

While Rhubarb and Rose's opening date had to be delayed after an accident smashed the front window of the shop, Rosie is looking forward to the launch which she hopes will come at the start of October.
