Bury St Edmunds' Bad Boi Burritos looking to take their Mexican food to the masses
A pair of Bury St Edmunds childhood friends are hoping they can take their fledgling food truck idea with a Mexican favourite to an even wider audience this year.
Perry Runswick, 28, and 29-year-old Callum Bailey started Bad Boi Burritos last year after the pair came up with the plan travelling around Australia.
Now that they have taken the truck to events, pop ups and even a well-known music festival in the area, with great success, the business partners now want to expand their locations to give more customers a taste of Mexico.
Callum said: “We have been friends since we were kids and we went travelling around Australia about three years ago before lockdown.
“The idea for the truck had been something we thought and talked about there and when we got back to the UK, a week before lockdown, it then gave us time to properly go through the idea and create Bad Boi Burritos.”
The pair decided to buy a converted horsebox and with Perry being a carpenter by trade it was not long before the pair got it how they wanted it.
He said: “It needed minor adjustments and tweaking, the main frame of it was there but we put in new worktops and stuff and we really like how it looks now.”
The three toasted burritos on offer - A ‘Bad Boi Beef Shin’ the ‘Chipotle Chicken Banger’ and the ‘Veggie Vibe’ have gone down really well with food fans.
Callum, a chef before their trip down under, said: “The feedback has been brilliant and with us just focussing on the three it really lets us make them the best we can.
“We did Bardfest last year and a lot of people and food bloggers messaged us about how good they were afterwards, which is great.
“We have really worked hard on getting the right components and ingredients spot on - for now we want to keep it simple but continue killing it with what we offer.”
But this does not mean the pair are resting on their sombreros as they are already looking for more places to offer their burritos and have set up Facebook and Instagram pages which are gaining popularity.
Perry said: “We are hoping to do more events, pop ups and festivals and hopefully get ourselves onto Bury market.
“And if things carry on picking up, who knows, we will just have to wait and see.”
