The owner of a restaurant, which was forced to shut amid tough trading conditions, is optimistic about its future, after adopting a more cost-effective approach.

For three years, The Loft in Sudbury had served traditional Polish cuisine at its eatery in Gaol Lane.

Combined with increasing costs, the dishes proved expensive and time consuming to produce, prompting the business to close in January.

Eager to reinstate the restaurant, after customers expressed their disappointment over its closure, Krzysztof Golos has decided to take a new approach by serving Italian food.

Mr Golos, who is a qualified chef, is determined to offer high-quality dishes, which he is confident will prove more successful.

“I want to show people that you can make something very basic with fresh ingredients,” he said.

“I don’t want people to just buy microwave meals – everything will be home-made in the restaurant.”

The business, which marked its grand reopening yesterday, will be serving dishes in the evening from Monday to Saturday, with plans to extend its opening hours to Sunday.
