Bury St Edmunds sandwich shop Wright's expanding in move to former Pizza Hut
A popular Bury St Edmunds sandwich shop is expanding to the town's former Pizza Hut restaurant.
Wright's has been based in St John's Street for just over a year and is moving to the bigger site, in Cornhill.
With the small St John's Street shop currently only able to serve takeaway due to its size and social distancing, the former Pizza Hut will allow them to seat customers and develop as a business.
Owner Adam Wright, who began the business on Bury St Edmunds market two years ago, said it was always his intention to expand and the market conditions with 'reasonable rents' and national chains leaving the town centre have provided the 'perfect storm for independents to step up'.
The 38-year-old said: "Lockdown really wasn't a surprise for us. I was quite well prepared and we gained a lot of new customers in that time.
"People who didn't know we were there discovered us.
"It was always my intention to move to a bigger premises and to grow what is called a 'chameleon venue' in the hospitality industry which means it changes through the day.
"It's light and airy at breakfast, then goes into brunch, lunch, dinner, bar trading all the way throughout - that was always my intention but probably five years later than now."
The new shop, aiming to open in mid-November, will seat eight tables of four to six and will employ 14 people.
Wright's popular toasties will remain but the takeaway section will double in size with grab and go fridges.
The premises will have an alcohol licence.
